<h3>History of the Glycemic Index</h3>
<p>There have numerous books relating to the GI Diet. It all started when David Jenkins and colleagues at the University of Toronto developed the Glycemic Index in 1981. <p>The Glycemic Index is a method that determines how carbohydrates impact blood sugar level. Carbohydrates are rated on a scale based on how quickly they break down during digestion. The lower the rating – the lower the glycemic index.</p>

<p>The glycemic index remains a work in progress.
